Fried Curd Curry


This is one of the easiest things to make. Fried Curd. It takes maximum 15 minutes and goes very well with rice. This recipe is meant for two people.



Ingredients:

1) Curd - 200 grams
2) Onion - 1 (Chopped)
3) Ginger
4) Green Chilies - 2 or more, as per your spice level
5) Asafoetida (Hing) - a pinch
6) Fenugreek - Half Tea spoon
4) Coriander seeds - One Tea spoon
5) Cumin - Half Tea spoon
6) Coriander leaves
7) Turmeric powder
8) Kasuri Methi (Dry Methi Leaves) - Optional
8) Salt

Procedure:

The procedure of making this is almost like Punjabi Kadhi. The only difference being that we do not use Besan(Gram flour) in it.

First and the foremost, take a vessel and whip the Curd thoroughly in it. Keep it aside, then take another vessel and put some Oil in it. Ahhh!!!!! this step is same in all the recipes so I think I should stop writing it again and again :-). Once the Oil is heated up, put some Hing and Cumin. Once the Cumin gets brown, put Fenugreek and Coriander seeds. Wait until they become brown and then put green chilies (chopped) and Ginger (grated or pieces, as per your wish). The trick to check whether Fenugreek and Coriander seeds are cooked, is to check for their smell. Once they are cooked, you will get the smell of their flavors.

Here, I want to share something with everyone. Always prefer using homemade Coriander masala. It is really healthy as compared to the one, which you get outside. You just need to grind the coriander seeds and that's it. Also, I prepare Garam masala at home. I never buy Coriander Masala, Garam Masala and Red Chilly powder from outside. Cooking must be healthy and it starts from using fresh, clean and healthy ingredients. Other advantage of using homemade ingredients is their taste and flavor. You can never get that taste in case of outside ingredients. In the same way, I always put long pieces of ginger because I like its taste and many times, I put these pieces while garnishing also. I never use Ginger or Garlic paste because according to me, it spoils the taste of your curry. Ginger is very good for health and always try to put it in all the curries. If you ask me, I put Ginger and Cumin in almost every curry. It helps in giving a good flavor and also keeps your digestion system healthy. Food is not always about taste, it is about health also. I agree that taste matters a lot but not at the cost of using unhealthy ingredients. Always remember, you are a good cook only, if your Modus Operandi is healthy.

So let's get back to our recipe. Now put chopped Onions and cook them on slow flame. Cooking needs patience so try to cook it on a low flame, until they get brown. Then put some Kasuri Methi and a glass of water. Once it gets boiled, cook it on low flame for 5 minutes. Now your paste is ready and here comes the most important part. We have to mix the curd with this paste. Here, most of the people do a mistake of putting the Curd in the hot paste. The trick is that Curd gets spoiled when you mix it with something hot. So, remove the vessel from the stove and let it become cold for two minutes. Now slowly slowly start putting the Curd and stir it alongside. And here you go, your Fried Curd is ready.
